Caucasian Khychin (karach-khachin, khytsyn, hechin) is a cake made from thin dough with cheese, cheese or meat stuffing with herbs, a national dish of Karachais and Balkarians. The supreme hospitality of the hostess of the house in the past was considered to be an invitation to "hutchins". This is one of the most honorable dishes in the list of flour dishes of Karachay-Balkar cuisine. Any feast was simply unthinkable without khichin.
